I’m Still Alive Over Here…

Sorry I seemed to drop off the face of the Earth there.  I have been overwhelmed with both work & school.  Going to school full-time, plus having to work nearly 40 hours a week was not on my good-times to-do list!  I will force myself to blog at least once a week, no matter what, even if that means taking pictures of baked treats I make for work.  I have a lot of catching up to do on all your blogs, but I will attempt to see what I’ve been missing. Hopefully my work hours will decrease soon! :o(

Here was a dish I was living on last week.  Fried veggie rice with TONS of super-firm tofu in it.  High protein yumminess:

I also got my Vita-Mix yesterday!  For breakfast this morning, I made myself a blueberry smoothie made from frozen blueberries, yogurt & a little bit of agave.  My mom is coming to visit me for a while, so I’m hoping to load up on tons of fresh & frozen fruits & veggies, so I can juice those suckas!  If any of you are car-less, you know how hard it can be to buy a ton of food when you have to cart it on the bus or bike it.  I’m taking advantage of this vehicle!

I hope everyone is well.  I can’t wait to see what you’ve been up to…

    I worked full-time and went to school full time through grad school too–I feel your pain! Hang in there!

    Isn’t the Vita-Mix awesome and amazing?! I love mine!

    ohhhhh – I am so jealous – I really want a vitamix. My parents have one… then they got another second hand (really cheap) but did they give one to their beautiful daughter??? NO! – they decided that the second one is a necessary backup 😦

    that fried rice looks really good!!!

    school and work is a huge PITA, it’s definitely hard.

    The fried rice looks perfect (to steal vaishali’s words) and congrats of the vitamix, they rock (I love mine)

    Hang in there! I did full-time work and two degrees during three years of my four year undergrad…I would never wish that on anyone! I finally gave in my Sr. year and wasn’t working any more. At least you’re eating really yummy & healthy food to keep you going!

    I only work part time and still have problems to get all my school stuff done…I am sorry you have so much work to do. Don’t worry about blogging, even if you posted only once a month, that would be totally okay with me!

    Courtney—You are amazing! I shouldn’t complain. Yes, the Vita-Mix is my friend! Love it.

    Georgia—Oh, harsh move by your parents! I would just ask to “borrow” it, then keep it forever, unless theirs breaks! *evil* But really, they don’t ever break, so they should definitely give their other one to you. :o(

    Vaishali—Thank you. I am slowly catching up on rest & eating well & all that good stuff.

    Bex—Yes it is, but I should appreciate the fact that I am able to go to school & have a job. I’m so excited that there are a lot of Vita-Mix peeps around! We need to make a club or something.

    gah i cannot tell you how jealous i am of your vita mix. I’ve just worked on a show where they had a stand and i spent half a day eyeing them longingly! I might have to start a vitamix savings fund!
