Cleaning Out the Fridge
Since my brother & Ethan were staying with me last week, my refrigerator got a little out of hand, so I had to dig around in there to find out what the hell to make. I didn’t follow a recipe, but my little casserole turned out great! I’ve heard that vegan cheese tends to go bad pretty quickly, growing scary pink mold & stuff, so I had to use up the rest of the nacho Follow Your Heart cheese that I got.
I sauteed a bunch of mushrooms in olive oil with garlic & green onions, then added some tomato sauce, chili powder, cumin, hot sauce, then the cheese. All I did was layer this mixture with corn tortillas, then topped it with the rest of the cheese & some pickled jalapenos. I baked it, covered, until it was bubbly & melted looking. I’m amazed how melty the cheese got! I’ll definitely buy this again, next time it’s on sale.
