Cleaning Out the Fridge

Since my brother & Ethan were staying with me last week, my refrigerator got a little out of hand, so I had to dig around in there to find out what the hell to make. I didn’t follow a recipe, but my little casserole turned out great! I’ve heard that vegan cheese tends to go bad pretty quickly, growing scary pink mold & stuff, so I had to use up the rest of the nacho Follow Your Heart cheese that I got.

I sauteed a bunch of mushrooms in olive oil with garlic & green onions, then added some tomato sauce, chili powder, cumin, hot sauce, then the cheese. All I did was layer this mixture with corn tortillas, then topped it with the rest of the cheese & some pickled jalapenos. I baked it, covered, until it was bubbly & melted looking. I’m amazed how melty the cheese got! I’ll definitely buy this again, next time it’s on sale.

    Those kind of fly by the seat of your pants meals often turn out to be some of the best, don’t they?! Yours looks delicious!

    That looks so good!

    I use Cheezly Cheese. I pop it in the freezer and it doens’t go bad so quickly. You don’t have to defrost it before using, you can just use a grater and it works fine…

    I just got some sheese and it is wonderful. This meal looks great. My Mom would go nuts for it. Anything with jalapenos!

    Courtney—I agree! I always regret not writing down measurements when I come up with a really good one too. Oh well.

    veganshane—Me too! I wish I would have gotten a mozzarella FYH while they were cheap!

    Sanja—I haven’t tried Cheezly yet. Thanks for the tip on freezing it though. I don’t like feeling pressured to use it up so quickly for fear of pink moldy gunk!

    Nikki—Oh yum. I’ve heard really good things about the smoked Sheese, especially.

    mmm, that looks melty good!

    Sheese is good – also, it lasts AGES! I had some in my fridge for months and it didn’t go mouldy – unlike the cheezly which went mouldy in about a week!

    Sal—Weird. What is up with the rapid-mold cheeses?! Now they seem even creepier, if Sheese stays free of growth. Gross.

    Jennifer—Thanks! I think the secret to getting the stuff to melt if covering it. Although I’m not sure that would work for pizzas & stuff, unfortunately…

    Cheese, mushrooms and hot sauce: all my favorite ingredients!. This looks divine, and I am sure it must have tasted even more so.
