Sunny Blueberry-Corn Muffins

Ethan came back from visiting his parents along with a bounty of produce from his dad’s garden. One of the things I’d hoped he would bring back was blueberries, and he did! Apparently they cleaned off all their bushes for me, which was so sweet (literally!). I chose to make the sunny blueberry-corn muffins from VWAV because I also had a huge lemon & have been into corn lately. Here’s the recipe, but you should go out & buy the book, because everything I’ve made in it has been amazing!

Sunny Blueberry-Corn Muffins *makes a dozen*

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1/2 cup veggie oil
  • 3/4 cup soy milk
  • 2 tablespoons soy yogurt
  • 1 teaspoon vanilla
  • zest of one lemon
  • 1 1/4 cups blueberries

Preheat oven to 400*F & either grease a muffin tin or line them with cupcake/muffin papers. Stir together the dry ingredients in a medium bowl. Whisk together the wet ones in a small bowl, then pour them into the dry ingredients, stirring only till combined. Carefully fold in the berries, then spoon the batter into the muffin cups, filling 3/4 full. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

    I still have a pack of blueberries in the fridge, and have yet to figure out what to do with them. Adding them with cornmeal sounds delish!

    Oh man, these look super good! I love cornmeal muffins..and blueberry muffins! What a genius combo!
