Black Bean Mania

Since I’ll probably work all day tomorrow, & will be living off of leftovers for a bit, I thought I’d post these pictures of what I made with a bag of black beans I soaked overnight.

This is the black bean burger from Veganomicon. It was so delicious, even though I forgot to add the cumin & the fact that I desperately need to go grocery shopping (thus the shabby fixin’s of green onions, Vegenaise, & ketchup). Doh!

The rest of the beans went into this soup. It’s from my 12-year-old edition of Vegan Vittles. Like many of the recipes in the book, it had a terrific base, but needed more seasoning. I added some minced Serranos, Rapunzel veggie broth powder, Cajun seasoning, & cumin. It’s really good. I’m giving a jar of it to Ethan, but still have a ton left. Good stuff.

    That burger looks so good! I’ll have to make that recipe sometimes.

    The burger and soup look great. I haven’t tried this burger recipe yet. Just recently made my first veggie burger using black beans and soyrizo (from Just the Food blog recipe). I’ll have to try the VCON version too!
