Black Bean Mania
Since I’ll probably work all day tomorrow, & will be living off of leftovers for a bit, I thought I’d post these pictures of what I made with a bag of black beans I soaked overnight.
This is the black bean burger from Veganomicon. It was so delicious, even though I forgot to add the cumin & the fact that I desperately need to go grocery shopping (thus the shabby fixin’s of green onions, Vegenaise, & ketchup). Doh!
The rest of the beans went into this soup. It’s from my 12-year-old edition of Vegan Vittles. Like many of the recipes in the book, it had a terrific base, but needed more seasoning. I added some minced Serranos, Rapunzel veggie broth powder, Cajun seasoning, & cumin. It’s really good. I’m giving a jar of it to Ethan, but still have a ton left. Good stuff.
