I’ve been really busy at work this week. We just re-opened and today is our official “party day” with free food while it lasts. There hasn’t been time for me to bake much at home, but some of the stuff I whipped up at work includes:
*cranberry oatmeal cookies
*chocolate chip oatmeal cookies
*cinnamon raisin scones
*cranberry orange scones
*walnut fudge brownies
*and dozens of these toasted coconut cupcakes w/coffee buttercream (courtesy of “Vegan Cupcakes Take Over the World”!)
They are pretty amazing…
Every item that I bake at work must be vegan. It’s really awesome to create a space that allows vegans to have a whole variety of treats available to them, without worrying about ingredients constantly. Our cafe is all vegetarian, but in-house baked goods are vegan. Pretty cool, huh?!
P.S. I would take more pictures, but our cafe is in a windowless basement, which makes for pretty awful photos. This lucky cupcake was “rescued” by me, only to be delivered into the greedy, awaiting arms of my sis.
