I Had a Craving…
So I made some baked vegan donuts! It was so fun (that means messy!). I used this recipe, then used the converter to make only 4 servings, left out the cinnamon, used melted margarine in place of shortening, Ener-G egg replacer for the egg, & soy milk for the milk. It made one dozen mini-muffin donut holes. After they were cool, I either rolled them in powdered sugar, dunked them in chocolate or vanilla glaze, then decked them out with some sprinkles & let them dry. I would have made some coconut ones too, but I’m all out of it.

Someday I’ll make the authentic fried type, but these are satisfying and won’t leave your house smelling like a fast food place.
Chocolate Glaze
- 1/2 cup powdered sugar
- 1 tablespoon cocoa
- 1 tablespoon melted margarine
- 1/2 teaspoon vanilla
- 1 teaspoon water, plus more if needed
Whisk everything together until smooth.

Courtney—No, I used my mini-muffin pan, so they’re more like donut holes. I live in a studio, so I can’t buy every cutesy baking item, so I don’t have a donut pan either.

I love the blue sprinkles with the chocolate glaze. I have to give your chocolate galze a try. Everytime I make homemade donuts my son doesn’t think the glaze is sweet enough and he snubs them.

These are just adorable! They look great. I also wanted to let you know that I made your Banana Split Bread (had to change a couple of things for my own dietary restrictions) and it came out GREAT–I would have taken photos but my honey ate it all before I thought of it! Will try again and let you know.

those look SO good. I have to admit i really miss donuts since going vegan. I’ve been eyeing a donut maker for ages but like you, don’t have the room for all the gadgets I want!

They are so adorable! I wish I was able to get blue sprinkles (I can only find multi coloured ones – and it’s a bit too much of a hassle to sort them by colour…)
