Goodbye, Sage!
So, the time has unfortunately come for my friend to move. First, she’s going to visit her family in Florida, then she’s off to Sweden for grad school for two whole years. Sad. But I’m so happy for her.
Tonight, we’re having a little get-together in the park, with friends from work (a vegetarian cafe at school). I got her this book, made her a batch of chocolate chip cookies for the road, & also baked these Kahlua cupcakes for the party from VCTOTW:

I just used the chocolate cupcake recipe, added 2 tablespoons of espresso powder & swapped a little Kahlua for some soy milk. The frosting is probably enough to give you a buzz. I used Kahlua for all the liquid in the chocolate buttercream recipe, & probably added 2 good teaspoons of espresso powder. They pack quite a punch! Now the real test is how well they’ll hold up on the bus…

That frosting looks perfect – I never get it to look like that!
I just made these, and hot damn and halleluja! I actually added a little extra espresso powder to the frosting. And, of course, the omni I shared them with was in awe that it was vegan. Love it.
