Nacho Cheez!

Here’s what I came up with. It’s going to be my goal to perfect it over time, so I hope it’s good enough to post! I’m pretty pleased with it so far. The base was inspired from the New Farm recipe for melty nutritional yeast “cheese.”

Nacho Cheez Sauce
- 1/4 cup nutritional yeast flakes
- 1/4 cup white flour
- 1/2 teaspoon salt
- 1/8 teaspoon Cajun seasoning
- 1/8 teaspoon garlic powder
- 1/8 teaspoon cayenne
- 1 cup water
- 2 tablespoons margarine
- 1/8 cup fire-roasted red peppers, drained (or pimentos)
- 2 pepperoncinis, stemmed, but not drained if possible
Mix dry ingredients in a saucepan. Whisk in water. Cook over medium heat, whisking constantly (kill the lumps!), until mixture is thick. Let it cook for a minute or so, then remove from heat & add margarine. Toss the sauce into a blender, add the red peppers & pepponcinis. Blend or pulse until it looks nacho-y. You can add more of any of the ingredients to get it to taste just right for you. Even the color looks like the 7-11 nacho cheese pump type!
Also, yesterday, I made some Evolution Cookies for my friend, Matt, who was bitten by a dog & had to get stitches. The recipe is from VegWeb, and I’ve probably made it about fifty times. Good stuff.
